A. D. Rattray’s 81st Cask Collection release for Autumn 2026 explores the art of flavour - the way individual elements combine, contrast and evolve to create a whisky’s unique character. 

In whisky, we often describe flavour through individual notes: fruit, spice, sweetness, smoke, cereal and oak. Yet the most memorable whiskies are rarely defined by a single characteristic. Their appeal comes from the relationship between those elements – the way richness can be balanced by freshness, sweetness by savoury depth, or intensity by elegance. 

Independent bottling allows us to explore these relationships across individual single casks. From coastal sweetness and maritime smoke to rich cereal notes, bright fruit and refined spice, Cask Collection 81 showcases whiskies where flavour is not simply found, but patiently revealed through maturation and time. 

As with all our Cask Collection releases, each cask is presented at natural strength, undiluted and unfiltered. These selections celebrate the complexity of flavour – not as a checklist of individual notes, but as the harmony created when they come together.
