Nose
Dried cranberry, orange, raspberry coulis and rose.
Palate
Grilled bacon, maple syrup and wood smoke.
Finish
Tongue-tingling chilli flake and sea salt with sweet ash dusting.

Further Information

Finished for 2 years in an Oloroso sherry hogshead from Tonelería Juan Pino, previously used to mature our special Cask Islay Sherry Edition. The cask’s previous contents are key: dried fruit from the sherry contrasts the grassy notes of the spirit, whilst subtle smoke from the Islay malt picks out light peat in the Highland spirit.
